No stranger to the dining scene on Tras Street is Violet Herbs. Helmed by Chef Edward Hoe, Violet Herbs has cemented its reputation as a formal fine dining restaurant that’s above the rest of the competition.
The new menu has moved to a more sophisticated version– with some playful use of herbs in all of their signature dishes. It reflects a sense of novelty, seeking to provide diners with a bit of something new, striking a dash of curiosity and interest.
A start you don’t want to end
The mango scallops ($18) were wonderfully plump. We loved the wonderful textures of the scallops with parsnip puree and mango salsa. The taste was so complete and refreshing.
I don’t think that foie gras dish is easy to be perfect. Dressed with summer truffle, the truffle foie gras ($26) was delightfully presented with one-hour poached egg. The unique sauce uplifts the overall savoriness of the dish
Mains that you will love
I don’t typically order lamb.. But this colorado lamb rack ($52) was quite perfect with a delicious bed of couscous and rosemary reduction and that tender, seasoned meat. Delish.
Feeling really hungry or looking for something hearty? The cold pasta ($36) is cooked to a perfect al dente, with special addition of abalone and shio seaweed. Violet Herbs did well for their mains.
This roasted chilean seabass ($38) is as tasty as it looks. Very interesting, with a soft texture enveloping the tender roasted fish packed full of flavor, this was an easy favorite. Let’s just hope it becomes a mainstay on the next menu revamp…
A triple chocolate mousse ($18) with raspberry sauce stands between us and dessert. The dessert gives a punch of sweetness over the chocolate goodness.
It is value-for-money to dine at Violet Herbs. No wonder, the restaurant is a popular option to hose many business luncheons. Weekday 3-course lunch menus begins from $39 per person. Weekday 4-course dinner menus begin from S$72 per person. Fine dining experience is made so possible.
