The distinctive flavors of the cranberry Mille-feuille and tangy tartlet offer a versatile taste profile that beautifully complements the foie gras. This dish is aromatic, creamy, and citrusy all at once.
Once more, Nicolas demonstrated mastery in sauce creation. The fresh scallops with sancho pepper and mushrooms were beautifully delicate, colorful, and delicious. This dish quickly became one of my favorite highlights.
