Certain parameters define the real thing. Chef Pam’s 5 Elements, 5 Senses and 20 dishes in a menu framework are bringing the Michelin precision back to Bangkok. Their famed more than 2 hour gourmet journey will have you seeing stars. When we say, it’s exciting. It’s really exciting.
I got an exclusive sneak preview of what is set to be the hottest table in town, Potong Bangkok. f you can get a seat, that is. The restaurant’s reservations are fully booked till Q1 2024. I am not surprised.
Winning 1 star Michelin, Potong is situated in an old school Chinese eating house as it delivers the gourmet experience in a theatrical style. The diner is whisked across different levels of the shophouse, experiencing different stages of the menu process.
While the food design is one thing, we’re all about the eats. I had one of the most memorable dishes – “surat thani” oyster, it was fresh and chewy dipping into the black squid ink. None more enticingly so than the simple, Chef Pam took us through an excursion journey of exploring our 5 different senses as every dish was progressively interesting.
The dining mood was also kept ‘sexy’ as the restaurant was a veritable combo with their famed cocktail bar, Opium. Every diner is assured with table service and at times, you will be whisked away with the little stories of Chef Pam.
The next dish was so sensational that I felt so close to ‘reincarnation’. The flavors from the grated salted yolk and caviar worked magic to your tastebuds.
It’s safe to say, you will leave the restaurant like a super filled hot air balloon as you continue to explore the layers of flavors across roasted duck brain and heart, 5-spiced aged duck and more. It sets your heart racing.
The whole dining experience (5500++ per guest) triggers a lot of excitement as you dive deeper with the taste profiles of the 20 dishes. It’s a safe bet to say that Potong is going to add more accolades to their existing galaxy.
