Keyaki led by Chef Naohisa Yamada in Pan Pacific Singapore is running a seasonal Omakase and Sake pairing menu now. The menu includes many seasonal yet premium Japanese dishes like massive Hyogo Oyster, Teppanyaki with delicate abalone sauce and Wagyu beef.
With an extensive list of sake bottles from different prefectures, we tasted the seasonal menu in stages and holistically.
The entire menu (SGD$290 per pax, sake pairing at SGD$70) is sensationally delighting your taste buds. One of the key sake highlights has to be Kamosumori Junmai Daiginjo Nama as the sake reinforces the creaminess of the sashimi with light fruity notes.
Taste with crisp dryness but with a smooth finish, Daishichi Junmai Kimoto is certainly refreshing as it pairs with relatively deep and intense Teppanyaki meats with the abalone sauce.
Keyaki’ definitely delivers its tempura selection with different perspective and flavor. The Kimoto sake hits you further with longing, complex and sensational finish while you practically munch every bite of the freshly fried tempura with discreet.
Each course is enhanced with a meticulously crafted sake selection, complementing the flavours of each ingredient. It’s definitely worth a visit.
